Repositioned the outlet as a destination dining experience in its own right, rather than an afterthought to the hotel stay. Developed a plant-forward concept built around seasonal, rotating menus and a local sourcing narrative that gave the outlet a distinct story guests could connect with.

The outlet was repositioned as a genuine destination dining experience, with a stronger F&B identity and noticeably increased staff confidence in presenting and explaining the new concept to guests.

Reformulated the recipe for scalable production without sacrificing flavor, identified a suitable co-packer, and advised on packaging design and retail positioning to make the product shelf-ready and competitive.
